This is a wonderful time of year for fresh vegetables and fruits. I have discovered that roasted vegetables have the most WONDERUL taste.


You can use most squashes, mushrooms, red onions, and peppers as many colors as you can find. About 2 pounds worth. (EG. 1 medium zuchinni, one large green onion. 2 large peppers, 8 oz mushooms)
Chop them in slices and chunks.

Preheat overn to 450 degrees.

Mix 1 tablespoon olive oil, 1 tablespoon rice vinegar, 1 teaspoon fresh rosemary or oregano and 1/4 teaspoon salt. Pour over veggies then spread over a large shallow sided baking pan sprayed with
cooking spray. (Try different flavors for variety.) Roast for about 30 minutes until they are brown and carmelly looking on the edges. Serve as is or in a warmed tortilla as a wrap. (If you do that spread the tortilla lightly with cream cheese or yogurt cheese.)
