I made a really good soup today. I had some smoked chirizo left so I cooked it with a chopped onion and stirred in a couple of tablespoons of cornmeal. Then I added a can of chopped green chiles and about four cups of chicken broth. Then throw in a cup and a half of mexicorn (corn with peppers) more or less. Heat to boiling and simmer for about 15 minutes. Then serve with grated Monterey Jack cheese and chopped parsley sprinkled on top.

It was great. Spicy and tasty.
